We all love getting the chance to take the time to show our appreciation and love for our mothers, and even though we love them every day of the year, Mother’s Day is a great day dedicated to them.
A simple way for the whole family to show their love and spoil mum on their day, is breakfast in bed!

Here’s a simple healthy recipe that the whole family can created to treat mum to a relaxed Sunday morning breakfast in bed.

Feta and Spinach Muffin Frittatas
– 1 hand full of baby spinach leaves – Shredded
– 60g of reduced salt, low fat feta cheese
– 6 eggs
Preheat the oven to 175C.
Place the 6 cupcake liners in a muffin tin and lightly spray the liners with cooking spray to prevent it from sticking.
Evenly distribute the shredded spinach and chopped feta cheese in between the muffin cups.
Whisk together the eggs and add pepper to taste.
Carefully pour the egg mixture evenly in the cups and bake for 15-20 minutes until lightly golden and firm.
This recipe makes 6 muffin frittatas.
Once cooled you can store the frittatas in the fridge.

The breakfast obviously isn’t complete without a vase with flowers and a big hug!
